Queso Iberico is a Spanish cheese made from a mixture of sheep, cow, and goat milk. The cow's milk provides a smoothness which compliments the sharper, tangy flavours from the sheep & goat milk. It is a great cheese which can appeal to a variety of palates as it is not overpowering yet very well balanced. As this cheese is matured (aged longer), it will be a bit stronger tasting and firmer than the semi-cured cheese.
